How do you release those type of full bends when you only bend up, everytime I release I seem to always play the open string on top of it.

Try muting the open string with your right hand. It can take some getting used to, but it works.

You can also try releasing the pressure a bit which will mute and then backing off the string as if you were allowing the note to bend back to the natural state. That way you should be able to avoid plucking the string on the release.
