Intonating an Acoustic

Hey,
I was wondering how do you intonate an acoustic guitar?

Acoustic guitars generally are "pre set" from the factory... I've only seen a couple of Yamaha's that came with adjustable saddles.

I also have seen a few bridges that are pre cut to a setting... but they didn't help my old cheapie acoustic... I think thats one of those "you get what you pay for" things.

Resetting intonation on an acoustic is a job for the pros.

I've got to replace the saddle on my yamaha FG312, I'll have to take it into the music shop, is that the best idea or can a more skilled guitarist I know do it.
