If
this is the type of adaptor you have, it won't actually convert mono to stereo. It will do exactly the same thing as plugging directly into a stereo input on your soundcard.
For example, if you look at the second image in the picture below you can see that the "right" channel is muted to ground because they both contact the same part of the jack (the sleeve). Therefore, the only sound that goes through is the "left" side and you will only get sound in only one speaker.

However, there is a way around this. If you don't push the jack into your soundcard all the way (the third image in the picture above), the signal on the tip of the cable will be transferred to both the left and right channels and you'll get sound out of both speakers. This is only necessary if you're just trying to hear the sound from your speakers while you're playing (ie, you're not recording or anything).
If you are recording however, then all that mentioned above isn't actually necessary as you can record straight to a "mono" track (instead of a stereo track) and it will playback in both speakers. If you choose to record a mono track, you can select to record the "left" or "right" side, so pick the one that the sound comes out of. Then when you record, the mono track will playback in both speakers.
