Hi rustyshoes2000! One of the main things I have Learned about Midi Files & Polyphonic sounds as you call them, is to keep them to a "minimum". Using the Drums & Bass is fine. To add some organ OR Strings Or Pad sounds OR even some piano can sound OK.
The Problem with polyphonics is when you use too many backing sounds at once, then they tend to be more noticable than the "LIVE" sounds of the Guitar and Vocals. (Less is more! )
So the KISS method is best. Obviously the more "LIVE" tracks you have the better too.
The Quality will still be fine with Sonar that'a what it's meant for.
