From what you're describing, it sounds like they're tuning using harmonics. You place your finger on the string very lightly (not pushing it down to the fretboard), pluck the string and immediately pull your finger off the string. The resulting sound is a bell-like tone. The 5th fret harmonic on a lower string will sound like the 7th fret harmonic on the next higher string, except for the usual "kink" in tuning between the G/B strings.
